These herb-infused mashed potatoes are rich in flavor and are a savory side dish. They are very creamy, fluffy and exceptionally buttery. They are easy to make and are heavily requested at my family gatherings!

  1. Peel and cut potatoes and place them into a large pot with the un-chopped herbs.
  2. Fill pot with cold water until potatoes are covered by over half an inch of water. Cover the pot and bring to a boil.
  3. Once boiling, remove cover and keep boiling until potatoes are tender enough to run a fork through. This takes about 25 to 30 minutes.
  4. Drain potatoes and remove herb sprigs.
  5. Begin to mash the potatoes however you are accustomed. Add milk and half and half while mashing.
  6. Add garlic and butter into a sauce-pan. Melt the butter and sauté garlic for about a minute, stirring occasionally.
  7. Add butter-garlic mixture, the chives, and some salt to the potatoe pot, stir to combine - until evenly distributed
  8. Taste and adjust by adding any seasonings until the flavor is to your liking!
