Garlic Herb Mashed Potatoes

These herb-infused mashed potatoes are rich in flavor and are a savory side dish. They are very creamy, fluffy and exceptionally buttery. They are easy to make and are heavily requested at my family gatherings!

Ingredients
- 4 Teaspoons Parsley
- 4 Pounds Potatoes
- 1 Sprigs Rosemary
- 5 Leaves Sage
- 8 Sprigs Chives
- 1 Tablespoon Minced garlic
- 1⁄4 Cup Chopped chives
- 3⁄4 Cup Half and half
- 1⁄2 Cup Milk
- 1⁄2 Cup Butter
Steps
- Peel and cut potatoes and place them into a large pot with the un-chopped herbs.
- Fill pot with cold water until potatoes are covered by over half an inch of water. Cover the pot and bring to a boil.
- Once boiling, remove cover and keep boiling until potatoes are tender enough to run a fork through. This takes about 25 to 30 minutes.
- Drain potatoes and remove herb sprigs.
- Begin to mash the potatoes however you are accustomed. Add milk and half and half while mashing.
- Add garlic and butter into a sauce-pan. Melt the butter and sauté garlic for about a minute, stirring occasionally.
- Add butter-garlic mixture, the chives, and some salt to the potatoe pot, stir to combine - until evenly distributed
- Taste and adjust by adding any seasonings until the flavor is to your liking!
